Well I'm sure it's not my first fail. Positive of that, actually. But as far as Gluten Free German Pancake Cups go, this was fail #1:
These are not puffy. They do not look even a tiny bit like this:
They simply look like corn bread muffins. Which is not at all what they are.
I'm not sure what happened. I followed a GF recipe and everything. They just didn't puff. Maybe more eggs? More xanthan gum in the GF flour I use? I'll have to experiment with this because they sure taste yummy with a little powdered sugar. The girls will enjoy these for breakfast before school, for sure!
