I am canning beans. So cheap and easy and quite the time saver! Today is mostly black with a few jars of white thrown in. We go through beans pretty fast around here. Black ones get used for salads and burritos, tacos, that sort of thing. White are a go-to for chicken chili and soups. So much faster to have them pre-canned than to soak. Although I did just get a pressure cooker which can pick up my failure-to-plan slack in the soaking department, should I be out of canned beans.
I think the hardest part of the process is getting this beast of lid to be seated right on the canner! And the fact that I have to do it at my mom's house. No one told me you couldn't pressure can on a glass top range until after I already had one! But since I'm out here all day most days for the girls' school day, I might as well be useful and industrious, right?
